Cooking Around the World- Georgian Recipes

We tried some new recipes this week from the country of Georgia.

Khacupuri - Georgian Egg and Cheese Bread

Using homemade or store bought bread dough, divide dough into medium size balls.  With a rolling pin flatten bread into a 10 inch circle. Starting on one side roll edges toward the middle. Roll opposite side towards the middle. Open bread up to make an oval shape with a hole in the middle. Press ends together to seal. Place on a baking sheet. Sprinkle feta cheese and muenster cheese inside the middle of your dough as much as you'd like. Let rise for 20 minutes.

Bake at 350 degrees for 15-20 minutes or until golden brown.

Take out of oven and crack an egg in th
e middle on top of your cheese. Place back in oven for 2-3 minutes. Take bread out of oven and allow to cool slightly. Drizzle butter over the top, if desired.

Eat by tearing off pieces of the dough and dipping it inside the egg cheese mixture.

KhinKali- Georgian Dumplings

Using a homemade pasta recipe you can create these Georgian dumplings.
Create the pasta recipe and allow to sit while you make the filling.

1 lb. ground pork, turkey, beef or combination
1/2 onion, grated
1/2 tsp. salt
1/4 tsp. pepper
1 T. dried parsley
1 tsp. garlic powder
Mix all ingredients together.

To make dumplings roll out pasta dough and cut with a circle cookie cutter or bottom of a glass. Roll each circle individually to flatten into a flat circle.

Place a mound of meat mixture in the middle of a flat circle and gather edges up together. Press ends together. Continue with all your dough.

To cook bring a large pot of water to boil. Add in a sprinkle of salt. Place dumplings in boiling water and cook 10-13 minutes. You may have to cook them in batches depending on how big your pot is. Don't overload the pot.
