Frozen Smores

Frozen Smores

A great summer treat that doesn't require a campfire.

3/4 cup heavy cream
6 ounces bittersweet or semisweet chocolate
14 or so graham crackers
1 pint vanilla ice cream, softened on microwave's defrost setting for 30 seconds
1 pint chocolate ice cream, softened on microwave's defrost setting for 30 seconds

Microwave cream and chocolate on high power until very hot, about 2 minutes. Whisk until chocolate melts into a smooth sauce.
Line an 8-inch square metal pan with plastic wrap, leaving an overhang. Arrange 1/3 of the graham crackers over bottom, cutting the final few with a knife to fit. Drizzle 1/3 of the sauce over the crackers; spread evenly. Freeze until chocolate is just set, 5 to 10 minutes.
Spread vanilla ice cream over the chocolate. Top with another cracker layer as before. Drizzle another 1/3 of the sauce over the crackers; spread evenly. Freeze until just set, 5 to 10 minutes. Spread chocolate ice cream over the crackers. Arrange a final layer of crackers over the ice cream. Spread remaining sauce over crackers.
Freeze until set, about 2 hours, or double-wrap in plastic and freeze up to 5 days.

To serve, lift dessert from pan; discard plastic wrap. Halve the dessert; cut each half into 6 slices. Return to freezer briefly.

Walnut Crusted Chicken and Caper Pasta

Ingredients:
1 cup crushed walnuts
2 cups bread crumbs
1 pound chicken breast
4 egg whites
7 Tablespoons cream
1 clove crushed garlic
5 Tablespoons shredded mozzarella
1 box angel hair pasta
3 Tablespoons capers, optional

Directions:
1. Mix walnuts and bread crumbs in a bowl
2. Mix egg whites and 2 Tablespoons cream with a whisk
3. Trim fat off chicken
4. Move chicken to breadcrumbs and coat.
5. Put chicken on a greased pan and bake at 350 for one hour
6. Mix remaining cream, garlic, and cheese in a pan until cheese is melted and the mixture thickens
7. Cook pasta
8. Remove chicken and cut into small pieces
9. Add chicken pasta, and capers to the cream sauce and mix for 8-10 minutes
10. Enjoy! (add basil as a topping for extra flavors!)

Jell-O Shaved Ice

You will need:
- 1 cup of boiling water
- 2 cups of sprite or similar soda 
- 1/4 serving size of any flavor of jello 

First, you will put your jello mix and boiling water in a square cake pan and whisk until the jello mix has dissolved. 

Then, mix in the the soda. Next, freeze for 4-6 hours or overnight. 

Finally, with an ice cream scooper to shave the ice off and Enjoy

Summer Beverages

Strawberry Lemonade

3 strawberries diced (You can put more if you want more fruit taste)
Sugar to taste

Cup of Water
2 teaspoons of lemon juice

First you take a cup of water and put it in a mini blender... then and lemon juice, strawberries, and sugar. Blend it up and put it in a cup. Drink up!!!












Watermelon Madness

2 C. chopped seedless watermelon
1/4 C milk
2 C ice cubes
1/4tsp vanilla extract

Blend together until smooth.
Add a mint sprig on top for a garnish.







Lemon Lime Smoothie

Ingredients:

1 banana
1 lime
1/2 lemon
1/2 Cup plain yogurt
1/2 Cup diet 7UP
1 Cup ice cubes

Directions:
1. Cut lemon and lime in half and remove seeds.
2. Squeeze lemon juice and lime juice into cups.
3. Peel then slice bananas.
4. Combine all ingredients in blender.
5. Blend until smooth.
